Let’s be honest, sometimes dessert is just the thing to go with a cup of fresh, hot coffee in the morning. This buttermilk coffee cake is sweet, crumbly and delicious, and you can add in different spices to suit your taste. I think the point of calling it “coffee cake” is so that we can feel a little bit less guilty eating dessert for breakfast 🙂 This recipe is not healthy by any stretch of the imagination, but sometimes you just need cake for breakfast.

Ingredients
2 ½ cups flour
½ tsp. salt
1 tsp. cinnamon
¾ cup white sugar
1 cup brown sugar
¾ cup vegetable oil
1 egg, beaten
1 cup buttermilk
1 tsp. baking soda
1 tsp. baking powder
Directions
Mix together flour, salt, cinnamon, white sugar, brown sugar, and vegetable oil thoroughly until crumbly. If you prefer more of a spice flavor, you can add in nutmeg and/or ginger at this point as well.
Reserve 1½ cups of the mixture to sprinkle on top of the cake.
Next, in a separate bowl combine the egg, ½ cup of buttermilk, baking soda and baking powder. Add into the first bowl and beat for 2 minutes. Add the remaining buttermilk and beat for 2 more minutes.
Now, pour your batter into a greased 9×13 pan and sprinkle the crumbs on top. If you prefer muffins over the 9×13 cake, I have made those in the past and they turn out great as well!
Bake at 350°F for 30-35 minutes, and then enjoy your delicious buttermilk coffee cake!
